Ingredients
- Dairy: 2 cups (480 g) Greek yogurt (plain or vanilla, full-fat or low-fat)
- Dairy: 2 tbsp honey or maple syrup
- Fruit: 1 cup (150 g) mixed red berries (strawberries, raspberries, red currants, sliced if large)
- Crunch & Garnish: 2 tbsp chopped pistachios or almonds (optional)
- Crunch & Garnish: 2 tbsp unsweetened shredded coconut (optional)
- Crunch & Garnish: Zest of 1 lemon (optional)
Instructions
- Step 1:
- Line a baking sheet (approx. 9x13 inches/23x33 cm) with parchment paper.
- Step 2:
- In a medium bowl, mix the Greek yogurt with honey or maple syrup until smooth and slightly sweetened.
- Step 3:
- Spread the yogurt mixture evenly onto the prepared baking sheet, creating a layer about 1/3 inch (1 cm) thick.
- Step 4:
- Sprinkle the mixed red berries evenly over the yogurt.
- Step 5:
- Add chopped nuts, shredded coconut, and lemon zest if desired.
- Step 6:
- Gently press toppings into the yogurt so they adhere.
- Step 7:
- Freeze uncovered for at least 3 hours, or until completely firm.
- Step 8:
- Remove from freezer, lift the bark onto a cutting board, and break or cut into pieces.
- Step 9:
- Serve immediately, or store in an airtight container in the freezer for up to 2 weeks.
