Field Trip Snack Cups (Print)

Portable cups combining creamy hummus with fresh vegetable sticks for easy, nutritious snacking.

# What you'll need:

→ Hummus

01 - 1.5 cups hummus, store-bought or homemade

→ Fresh Vegetables

02 - 1 large carrot, peeled and cut into sticks
03 - 1 large cucumber, cut into sticks
04 - 1 red bell pepper, seeded and cut into strips
05 - 1 yellow bell pepper, seeded and cut into strips
06 - 1 cup snap peas, trimmed
07 - 1 cup cherry tomatoes

→ Optional Add-ins

08 - 0.5 cup celery sticks
09 - 0.5 cup jicama sticks

# How To Make It:

01 - Wash all vegetables thoroughly under cold running water. Peel carrot and cut into uniform sticks approximately 3 inches long. Cut cucumber into sticks of similar length. Seed bell peppers and cut into strips. Trim snap peas and leave cherry tomatoes whole.
02 - Divide hummus evenly among 6 small lidded containers or jars, using approximately 1/4 cup per container.
03 - Stand vegetable sticks upright in the hummus within each container, creating a balanced variety of colors and textures for optimal visual appeal and dipping accessibility.
04 - Cover containers with lids and refrigerate until ready to serve. Consume within 2 days for optimal freshness and quality.

# Expert Tips:

01 -
  • No cooking required, which means you can assemble these while your coffee is still hot.
  • They actually stay fresh in a lunchbox without getting soggy, unlike most veggie trays.
  • Kids treat them like little treasure boxes instead of vegetables they're being forced to eat.
02 -
  • Cut everything the same day you plan to pack them—vegetables start to soften after sitting in hummus longer than a couple of days.
  • The hummus at the bottom will keep the veggies moist, not wet, so they stay crisp instead of turning to mush.
03 -
  • Invest in good small containers with tight lids—the difference between ones that seal and ones that don't is the difference between fresh veggies and sad ones.
  • Cut your vegetables the thickness of your pinky finger; anything thinner gets bendy, anything thicker doesn't fit comfortably in a mouth.
